Super Easy Cauliflower Soup

This soup is seriously so easy! This satisfying meal is perfect for a sick day or just a lazy afternoon. In our house we love soups for lunch and sometimes breakfast!
Cauliflower is great in soups when you want that creamy texture without adding cream to your soup. This soup has only a few ingredients but lots of flavor. Grab your cutting and get chopping…One head of cauliflower, two ribs of celery, garlic, onion. Through theses veggies into a pot with some olive oil and sweat them out add chicken broth salt and pepper. Almost done… let those vegetables get nice and soft at a simmer.
Now it’s time for one of our favorite kitchen tools to do the rest of the work!
Our vitamix blend makes the cauliflower soup creamy and delicious! Pour all contents of the pot into the blender and blend until smooth. Pour into bowls and top with whatever your heart desires. We like a nice drizzle of good extra virgin olive oil, herb crutons and some cooked bite size pieces of cauliflower.
Ingredients
- 2 Tbs Olive Oil
- 1 Head Cauliflower
- 2 Ribs of Celery
- 1 Onion
- 2 Cloves of Garlic
- 4 Cups Chicken Broth
- Salt and Pepper
Instructions
- Chop Cauliflower, celery and onion into bite size pieces. Next roughly chop the garlic. Using a large soup pot add the olive oil and turn on to medium low. Add the Cauliflower, celery and onions sautéed until onions and celery start to become translucent. Finally add the garlic for the last minute. Add chicken broth and cook on medium until the cauliflower in tender. Add the soup to the vitamix and puree until smooth. Add salt and pepper to taste.
