These crispy black bean patties are super easy to make. They use simple ingredients that you normally have on hand. Not only are they budget friendly but, they are healthy and kid friendly too!

When we first bought our house we did a lot of renovations. Sometimes we would be working on projects and need a quick easy meal. This was a perfect budget meal that was satisfying and easy to put together with out much effort.

We love that you can eat these on their own or as a burger topped with avocado and spicy mayo. This recipe we use them simply as patties served with a cumin yogurt sauce and fresh cilantro.

For the patties we start with a medium mixing bowl adding one can of black beans drained and rinsed followed by an egg, 3 cloves of confit garlic (slow cooked garlic in olive oil), one sautéed onion, 1/2 of a bell pepper, bread crumbs, salt, pepper and cumin. Next you take a potato masher and mash all the ingredients. Be careful not to mash to much you still want some of the beans to be somewhat whole.

Form the patties into your desired size. Next you heat some olive oil in frying pan on medium low heat and add the patties to the pan. Cook until crispy and heated through.

We like to serve our patties with some sauciness. We use whole milk yogurt mixed with cumin and lime juice. Top everything with fresh chopped cilantro and enjoy this healthy easy meal!

What is better then a weekend where you can enjoy a late morning or early afternoon with asian style rice bowl sipping a Spicy blood Mary and a hot espresso?! This rice bowl is a little brothy and filled with veggies and rabbit ginger sausage and let me tell you it hits the spot keeping you full until dinner time!

The best thing about these rice bowls is that you can use any of your favorite veggies or you can use up whatever you have in your fridge. This dish is a delicious savory breakfast or could be used as a lunch or quick go to dinner. This meal is also great if you are on budget, rice and eggs are super cost effective!

The flavors in this rice bowl can be spicy or mild depending on who you are serving. Our daughter is not big into spicy food so we either take out a portion for her or we can customize our own bowls by adding some sriracha to really crank up the heat.

The different flavors and textures in this dish really are great. You get the crunch from the different vegetables, the rabbit ginger sausage and gooey egg yolk breaking into the brothy rice. Adding a variety fresh herbs really makes the dish come alive!

Nothing says summer time like fresh lobster! Growing up, summers for Michelle were spent on Cape Cod eating fresh Lobster dipped in drawn butter. The memory of sweet Lobster and the salty butter dripping down your arm, while getting you daily dose of bug bites meant you were enjoy summer to the fullest.

Koen has found the perfect way to bring back these memories when we are not on Cape with a delicious BUTTER POACHED lobster! We also get to use some great seasonal produce from our garden. This time of year we have beautiful red beets.
