Nothing says summer time like fresh lobster! Growing up, summers for Michelle were spent on Cape Cod eating fresh Lobster dipped in drawn butter. The memory of sweet Lobster and the salty butter dripping down your arm, while getting you daily dose of bug bites meant you were enjoy summer to the fullest.
Koen has found the perfect way to bring back these memories when we are not on Cape with a delicious BUTTER POACHED lobster! We also get to use some great seasonal produce from our garden. This time of year we have beautiful red beets.
A beet rissoto is creamy, salty and delcious with whipped cream folded in at the end. The Sugar snap peas are picked up in a little butter to give them that beautiful shine. Topped with some nastursium leafs and dig in. Hope you are enjoying your summer with some fresh lobster too!
